Homemade Pumpkin Spice Oatmeal


I was craving something new one morning. I have been eating a lot of oatmeal and wanted some oatmeal but I wished I had a different "flavor" to add to it besides my typical brown sugar and cinnamon. I had recently seen a pumpkin oatmeal on a blog I follow but I did not have the ingredients to make it her way. I wondered if I added a little pumpkin to my oatmeal and maybe a little pumpkin pie spice if it would taste good? It tasted so good I have had it a number of mornings this week. Why didn't I think of this sooner. 

I decided to take pictures and share my "recipe" with you.

 First you need some pumpkin. My daughter had made 2 recipes using pumpkin recently. The first morning I tried this recipe I had to scrape a bunch of pumpkin of the top of a container of the leftover pumpkin she had frozen. That was not easy. I then let the container thaw and put the rest of the pumpkin in an ice cube tray. After these are all gone I will be taking another can of pumpkin and doing this again. I LOVE IT.
 The size of one ice cube is just the right amount for one serving of oatmeal.
Of course it depends on the size of your ice cube trays. These ice cubes are not that big. It seems to be about a tablespoon and a half of pumpkin or so... I didn't really measure.

 I stick one ice cube in my bowl...
 then microwave it 'til it is thawed.

Then I make a normal single serving of oatmeal.

I put my oatmeal in the bowl on top of the pumpkin then I add a sprinkle of Pumpkin Pie Spiced Sugar.
This is our Pumpkin Pie Spice. My daughter made it from a recipe she found online.
 She used this Pumpkin Pie Spice
to make some some Pumpkin Pie Spice Sugar,
 like cinnamon sugar but with pumpkin pie spice instead. CLICK THIS LINK to find her recipe for Pumpkin Pie Sugar and the link to the recipe she used for making the pumpkin pie spice as well. As she posted on her blog this has a lot of good uses... including on some buttered toast.

 Here is my oatmeal sprinkled with the pumpkin pie spice sugar.

 Here is the oatmeal all stirred and looking pumpkinny.

Add pumpkin pie spice sugar to taste. I wanted a little more so I sprinkled some more on top.
 You can also add more sugar if you want it sweeter but without more spice.  

I like my oatmeal with milk, you can have it with or without of course. 
This was my breakfast. All warm and yummy for a frosty morning.
